Up-to-date semi-refined and refined vegetable oils are the predominant feedstocks for the production of biodiesel. However, their relatively high costs render the resulting fuels unable to compete with petroleum derived fuel. In this book, the production of fatty acid methyl esters (FAME, biodiesel) from soapstock, a byproduct of edible oil refining, have been analyzed. A hydrolysis route is used to produce FAMEs from cottonseed soapstock. The method involved complete saponification of soapstock followed by drying and making as a pulverized powder. Esterification of saponified, dried and pulverized soapstock with methanol was held in the presence of sulfuric acid as a catalyst. FAME products were purified as in a sequence of centrifuge at 4200 rpm, neutralization, methanol recovery in rotary evaporator, and absorption with anhydrous magnesium sulfate to dry water and silica gel to adsorb free fatty acid (FFA) in a bed column. The book also contains optimum production conditions and preliminary economic evaluation indicating that a soapstock-biodiesel can be used as a complimentary fuel for countries such as Ethiopia which depend entirely on importing petroleum.

This work identifies four potential food and pharmaceutical applications of edible oil organogels and summarizes work that has been done to evaluate their applicability for these purposes. Background information on current applications of (inedible) organogels as well as oil structuring alternatives to the fat crystal network are reviewed prior to the discussion. Studies have shown that organogels do not significantly inhibit oil migration in multicomponent foods. In-vitro digestion experiments have shown that organogels may be useful in the controlled release of bio- active compounds. Clinical trials have shown that the replacement of conventional spreads (which contain unhealthy saturated and trans- fatty acids) with organogels may lead to measurable health benefits by decreasing the risk of coronary heart disease, type II diabetes, and metabolic syndrome. It has also been shown that phase separation of water in oil emulsions can be delayed by the formation of a gel network in the continuous oil phase. This work is of interest to those in the field of lipid technology, particularly those who are interested in alternative methods to structure edible oils.

Oyster mushrooms are popular edible mushrooms and commercially available in Korea and Bangladesh, which has been widely used for nutritional and medicinal purposes. The sequences of ITS region of selected strains revealed that the total length ranged from 507 to 663 bp. Sequence analysis showed that 5.8S of rDNA sequences were identical. RAPD and ITS techniques were well competent for detecting the genetic diversity of all tested strains of oyster mushrooms. Evaluation of the antioxidant activities, tyrosinase inhibitory effects on the fruiting bodies of oyster mushrooms extracted with acetone, methanol and hot water. Feeding of a diet containing a 5% P. citrinopileatus, P. eryngii, P. nebrodensis, P. ostreatus, and P. salmoneostramineus fruiting bodies to hypercholesterolemic rats reduced plasma total cholesterol, triglyceride, LDL, total lipid, phospholipids, and LDL/high- density lipoprotein ratio. Feeding mushroom also significantly reduced body weight in hypercholesterolemic rats. The plasma lipoprotein fraction, separated by agarose gel electrophoresis, indicated that oyster mushroom significantly reduced plasma beta and pre-beta- lipoprotein, while increased -lipoprotein.
